As a child I was overweight, as a teenager I was overweight and as I went off to college, guess what?! I was overweight. I was in my junior year of college when I received alarming news from a doctor. I was told I had four out of five symptoms of becoming a diabetic. I was 20 years old at that time and that news frightened me. So, I decided to take my health seriously! But where and how did I begin?
My first step was changing my eating habits. I had to change my mindset about food. Food is for FUEL. When you began to understand that certain foods eaten at a particular time will provide energy, lasting fulfillment (it eliminates the need to overeat). As I continued into my researched over the years and adopting new eating habits, I learned about plant-based diets.
